Strawberry Mini Muffins

Quick breakfast on a cold, cold morning. These are scrumptious! Filled with chunks of warm, fresh strawberries and topped with a crunchy sugar. They will brighten up a dreary morning!



2 cups flour
1/2 cup sugar
1 Tbs. baking powder
1/2 tsp. salt
3/4 cup milk
1/3 cup canola oil
1 egg
1 cup fresh strawberries, chopped
2 Tbs. sugar (optional)

Preheat oven to 375 degrees. Spray miniature muffin pans with non-stick cooking spray. In a large bowl, mix the flour, 1/2 cup sugar, baking powder, and salt. In a small bowl, lightly beat the egg and oil. Make a well in the center of the dry ingredients. Pour the wet ingredients into the well. Stir just until ingredients are moistened. Do not over-mix  Gently stir in the strawberries. Spoon a tablespoon of batter into each muffin cup.  If desired, sprinkle each muffin top with a little sugar. Bake at 375 for 12-15 minutes. Cool slightly and remove from pan. Makes 36 mini muffins.

Note: 
I used white sparkling sugar to top my muffins. Regular sugar works just fine.

I used Pam with flour to spray my pans. Regular non-stick cooking spray works well, too.
