Peach Salsa



I cannot get enough peaches.  I need an intervention!  I picked up another 10 pounds over the weekend at the farmer's market.  This afternoon, I was looking to whip up a little snack, preferably one that incorporated my stockpile of peaches. I decided to make a peach salsa. My salsa included peaches, green tomato, ripe red tomato, red onion, cilantro, and jalapeno. I made a small batch for my family, but you can easily double or triple it for a crowd. I served mine with baked chips, but I bet it would be delicious with grilled pork loin or chicken!

2 peaches (Ripe, but firm. You don't want mushy salsa) peeled and chopped
1 green tomato, diced
1 red tomato, seeded and diced
3 Tbs. red onion, diced
1-2 jalapenos, seeded and diced
1 Tbs. cilantro or Italian parsley, chopped finely
1 tsp. honey
1 tsp. olive oil
Juice of 1/2 lime

In a small bowl, whisk together the honey, oil, and lime juice. Add the peaches, green tomato, red tomato, onion, and jalapeno. Gently stir. Sprinkle with the cilantro and stir again. Allow the salsa to sit for 10-15 minutes for the flavors to blend. Serve with chips.
