I love a good summer cocktail, but all too often they are overly sweet. Since I was focusing on peaches this week, I set out to make a peach daiquiri that kept the spotlight on fresh peach flavor. A little playing around lead me to this. I think it's pretty awesome! Make sure your peaches are ripe and that your limes are fresh squeezed. I made a peach infused simple syrup, rather than using sugar as a sweetener. With ripe sweet peaches, a little peach syrup is all that's needed to make this a perfect cocktail for sipping on the porch.
1 ripe peach, peeled and chopped
Juice of 1/2 lime
1 to 1 1/2 oz. rum
2-4 tsp. peach simple syrup
1/2 cup crushed ice
Place all items in blender and blend on high until smooth. Serves 1.
To make peach simple syrup: In a small saucepan, place 1 cup sugar, 1 cup water, and 1 diced ripe peach in a saucepan. Bring to a simmer. Stir. Remove from heat. Slightly mash the peaches. Set aside to cool. Strain the peach syrup to remove the peach solids. Use the Peach Simple Syrup in this cocktail.
Notes:
Leftover syrup can be used to sweeten oatmeal, flavor buttercream frosting, or in pancake batter.
I made a small pitcher of Virgin Peach Daiquiris for my children. They went nuts! I used 4 peaches, 2 tablespoons of simple syrup and 2 cups of crushed ice. I kept the lime amount the same.
I used a gold rum, but you can use white if you prefer.
