I was shopping in Trader Joe's this morning and, once again, fell under the spell of their breads. Among other things, I picked up a Petit Rosemary Batard. Once I got home, I decided it would be the basis of an incredible (and quick!) lunch. I took about 2 ounces of softened goat cheese and stirred in a tablespoon, or so, of crumbled feta. I added a teaspoon of milk to smooth out the mixture and some fresh cracked pepper. I split the batard horizontally and spread both sides with the cheese mixture. I topped the bottom half with sun-dried tomatoes. Then instead of using lettuce, I piled it high with basil leaves. It was scrumptious if I do say so myself!
Cut into 4 sections with a serated knife. Serves 4.
